Lilac fairy Drink Recipe: Approach Lilac and introduce yourself to her. Greetings Lilac, how intoxicating your beauty & aroma. May I have some of your lovely flowers? The branch waves, yes. Thank you. Gather lilacs in your basket. Oh theres a spider, ok I have enough flowers now. Thank you graciously. Kiss. Now remove the flowers from the green stem, taking time to carry any bugs & critters outside back to their home. Now measure 1 cup flowers, 1 cup water, 1 cup birch sugar, 8 blueberries. Make a simple syrup by dissolving sugar in heated water in a pot on stove, add blueberries. Then turn off heat and add flowers. Stir & infuse 10 minutes. Strain. Add a squeeze of lemon juice to magically transform purple to pink color. Bottle. Keep refrigerated. Mind you, the flavor quickly fades with time so enjoy very soon. (After 2 weeks mold can form.)

Lilac Ice-cream (vegan)
Lilac Ice-cream (vegan).. Syreeni jäätelöä. This was an experiment that turned out surprisingly well, because I did not use an ice-cream machine. The trick is that you need to go stir it yourself pretty often while its freezing. But the recipe is simple, just 3 ingredients: 2 cups fresh lilac flowers (remove the flowers from the stem), 2 cups coconut milk, 3/4 cup birch sugar. Heat the coconut milk in a pot on the stove. Add the birch sugar, stir to dissolve. Then turn off the heat and add the lilac flowers. Stir. Let sit for 10 minutes. Strain out the flowers. Pour into a glass casserole dish. Let cool to room temperature. Then put into freezer for 90 minutes. After 90 minutes, scrape the sides of the dish with a knife to remove the mixture that is sticking to the sides, and stir the mixture quickly with whisk. Return to freezer for 45 minutes. Then again, scrape the sides of the dish with a knife, stir quickly with a whisk. Return to freezer for 30 minutes. Then again, scrape the sides of the dish with a knife, stir quickly with a whisk and return to freezer for another 30 minutes. Continue to do this every 30 minutes for a total of 4-5 hours. The more often you whisk the mixture, the lighter & fluffier your ice cream will be.

It tastes super yummy & floral. Next time I will make this with oat milk, because the coconut milk has a strong coconut flavor that can overpower the lilac. The flavor of the lilacs in the ice cream is subtle, so I recommend adding some lilac syrup (recipe is also on this website) on top of the ice cream and then its so incredibly good and bursts with lilac flavor. Rose & Lilac Infused Honey
The taste of fresh rose & lilac infused honey is something you will never forget. Sooooo delicious, like nectar for a floral goddess. And so simple to make. Roses are edible, and different species have different scents and flavors, so feel free to experiment. Just make sure that the roses are growing in a clean place with no chemicals being sprayed on them. Do not use roses from the store as those have been sprayed. And same with lilacs, they are edible. And some species taste better than others.
Pull the petals off the rose and use only the petals. With lilacs, pull the purple flowers off the stem and just use the purple flower. You can make rose infused honey or lilac infused honey or combine them together to make rose-lilac infused honey. All taste delicious. Place the fresh picked roses petals & lilac flowers gently into a clean jar, cover with honey, and let sit for at least a few days or longer at room temperature. No need to strain as the petals are edible. Although I have also removed the petals and dried them on the lowest setting in the oven to make rose ‘candies’ and lilac ‘candies’. You can add these floral infused honeys to ice cream or desserts or teas. Sometimes you just want to taste a spoonful directly from the jar because the taste is so yummy. Floral infused honeys can also be added to oxymels & elixirs. And given as gifts to friends & family. Enjoy!
Lilac Flower Lotion
Hand-made lilac flower lotion. You can do this, just 3 simple ingredients: oil infused with lilac flowers, water, bees wax. I used lilac flowers that grew in my yard but you can use any flower or herb that you like to infuse in oil. I used rose water, but you can use any floral water hydrosol that you like or simply use plain water. This lotion is silky smooth and feels wonderful on your skin. Recipe: clean all utensils & equipment that you will use. Measure 3/4 cup flower infused oil, 1 cup floral water hydrosol or plain water, 1/2 ounce beeswax. Slowly melt beeswax into oil in a double boiler. Once the wax is melted, set aside for a few minutes until a hard ring of wax starts to form around the edge. Pour water into a blender and turn on high speed. Slowly add the oil to the blending water. This forms a lotion. Do not over-blend. Put in a clean jar and keep refrigerated. This recipe does not have any preservatives so it must be kept refrigerated. You can always scoop some lotion out into a small bowl kept at room temperature to use that day, if you dont like the feeling of cool lotion on your skin. My lotions have kept perfectly in the refrigerator for up to a year. Enjoy!
Lilac Syrup
Lilac syrup, Syreeni siirappi, (Syringa species)… First time making lilac syrup and I can say this is really magical dreamy fairy flower stuff. The scent is heavenly, the taste is otherworldly, and the feeling is that you will lay down on the floor with the cat and sink into the sensual world, feels like floating on soft purple clouds…. Recipe: 1 cup purple lilac flowers (remove flowers from the stem), 1 cup water, 1 cup birch sugar (or white sugar), 5 blueberries. Combine water & sugar and heat on the stove until sugar is dissolved. Add lilac flowers and 5 blueberries and simmer 10 minutes. Strain and pour into a clean jar. Keep refrigerated. Enjoy your syrup within 2 weeks time. Serve over vanilla icecream or pancakes or mix with sparkling water. Enjoy!
